Mayonnaise

1 egg yolk or 2 quail eggs
1 tsp Dijon mustard
100-120 ml grape seed oil
1 tbsp lemon juice
sea salt to taste
freshly ground black pepper to taste
1 tsp lemon juice

Put the egg yolk or eggs, mustard, salt, and pepper in a bowl and whip with a whisk with a hand whisk or blender using slow speed. Continuously whisking or blendin, add the oil in a very very slow stream. After a while, stop adding oil and check the consistency. Add more oil until you have reached the desired mayonnaise consistency (the mass should be thick). At the end, add lemon juice and incorporate.
