Pumpkin granola

When the autumn season starts, there is no way to skip this granola made with pumpkin and pumpkin spice mix. It is something that, even when it is still dark outside and you are sitting with your breakfast bowl, reminds you of the season. It reminds you that somewhere outside, there is fall or winter that needs to have more warmth and spices. It is a recipe, that everyone likes, and by everyone, I mean even those who say they don't like pumpkin.

Ingredients

400 g quick cooking oats
pinch of sea salt
20 ml mild nut or grape seed oil
160 g pumpkin puree
200 g honey or coconut syrup
1 small tsp pumpkin spice or cinnamon
2tbsp vanilla extract
1/3 organic orange zest, finely grated
80 g cashews, roughly chopped
70 g peeled almonds, chopped
30 g pumpkin seeds
100 g dried cranberries without sugar
60 g goji berries (make sure they are soft, not hard as stone)

Prepare

Heat oven to 160°. Prepare a baking sheet and a baking pan.

Place the oats, bran, salt, oil, pumpkin puree, honey, vanilla, peanuts and spice mix in a large bowl and mix well.

Tip the granola onto the pan and spread evenly. Bake for 40 minutes, mixing every 5-7 minutes so that the sides do not brown too much. Remove and put onto a flat tray to cool.

When cooled, add rest of the ingredients and mix. Serve with cold cow, oat, almond or any other type of milk or yogurt. The granola can be stored in an airtight container for up to a month.
