Overnight marinated radishes
Pink as the flowers on that green dress, these radishes are perfect to eat just like that or put into a salad. They go well with meat and fish, as well as avocado and eggs. They are just what radishes are about – delicious. Inspired by the HM Conscious Exclusive 2018 green dress.
Ingredients
400 g radishes, sliced very thinly
1 rosemary sprig, just leaves
handful of basil leaves
1 tsp fennel seeds
1 large garlic clove, crushed or chopped
1 tsp freshly ground black pepper
1 tsp sea salt
zest of 1/2 organic lemon, finely grated
120 ml very mild extra virgin olive oil, more or less
60 ml fresh lemon juice
40 ml red wine vinegar
1 tbsp honey
Prepare
Put the first eight ingredients into a bowl and mix. Don’t squeeze it or anything like that. Just mix lightly. Put into a jar. In the same bowl, mix the honey, oil, lemon juice and vinegar. Pour over the radishes. Hit the jar lightly few times on the table, so that he liquid runs down and all around those radishes. If there is some oil missing, top with a bit more. Leave for 24-48 hours in the fridge. When you eat the radishes, there is no greater joy than dipping some of the bread into the liquid in the jar.
