Coulis
In shops, restaurants, cafes, and cookbooks in France, you will often hear and see the word coulis but do not be afraid - this simple unknown word means nothing other than a fruit, berry, or vegetable puree. Simple as that. Something you use as a garnish and serve with whatever you want - yogurt, ice cream, creme fraiche, fromage frais, or whatever you want.
350 g strawberries
40 g golden caster sugar
bit of vanilla powder
2 tbsp lemon juice
20 ml cold water
Place all the ingredients in a blender and blend to a smooth sauce. If you wish, strain, but there is no need when using a powerful blender. Pour into a jar or bottle and place in the fridge to cool.
