Dinner for 1. Baked fennel and smoked salmon salad
Heat the pan, and when hot, add 1 tbsp mild extra virgin olive oil and 1 medium-small fennel, cut into 6 wedges. Sprinkle with salt and cook on medium-high heat for 8-10 minutes, turning it over a few times so that it starts to get golden.
Wash and pat dry lettuce. Put in a bowl and mix with 2 medium-sized cucumbers cut into slices. Add 2 tbsp extra virgin olive oil and sea salt, and mix so that everything is evenly coated. Put on a serving plate, add fennel, some smoked salmon pieces, and freshly ground pepper. You can sprinkle over some dill and parsley if you desire.
