Pâtisserie Caroline Hubert

Some call her the queen of babkas. Others praise her for her sublime pastries. While others like to go to her pastry shop to get her cantuccini-like cookies made according to her grandparent’s recipe. The first time I discovered her was because of those scrumptious babkas, which I bought too many. And madeleines. However, to be fair, I fell in love with her work even before I entered the pâtisserie, passing it by, glancing every time I had a chance, and stalking her pastries on Instagram.

But then, one by one, those pastries appeared on our table, all so different every time, as Caroline’s philosophy is to work only with seasonal produce (except for the lemon tart), so the visit to the pastry shop is never dull. It is exciting more so ever. And even when looking for the classics like her babkas which tend to be mostly the same, there are always some seasonal surprises on her side.

Yes, maybe the pâtisserie is off the most popular tourist route, yet that is the beauty of it. Hidden next to La Place du Maréchal Lyautey, it is so close that you are almost one foot in the square and can enjoy your pastries there or take them home.

Made from local ingredients, fresh every day, they are always elegant, not too sweet and incredibly balanced. Moreover, they are made by someone who has worked in a pharmaceutical company yet always known that one day she would have her pâtisserie.

None of her creations, be it babka, madeleine, cookie, or tarte, has ever disappointed, as has the feeling of welcomeness and generosity at her pâtisserie.
